Flavored salts are easy to crate and make a perfect gift for any cook! We recommend the Citrus Fennel with Mendel Semillon and the Rosemary Peppercorn with Casa Silva Los Lingues Carmenere.
1 ½ cups kosher salt
- ½ cup coarse sea salt
- 2 tablespoons mixed peppercorns
- 3 tablespoons dried rosemary
- 5 large lemons
- 2 tablespoons fennel seeds
Preheat oven to 250°. Combine the salts and then divide into 2 bowls. Add the peppercorns and dried rosemary to one bowl. Zest the lemons and spread the zest onto a parchment-lined baking sheet. Bake the lemon zest for 15 minutes until dry, stirring half way through; cool. Add the zest and fennel seeds to the other bowl.
Grind the ingredients of each bowl with a mortar and pestle or in a spice grinder or food processor until coarsely crushed. Transfer both mixtures to airtight containers. Let the flavored salts stand overnight before transferring to jars or using.
Fill small spice jars with the flavored salts. Use as finishing salts for meats, vegetables, breads or your favorite dishes!
