- 16 Medjool dates
- 1 lb. aged Manchego cheese, but into 16 rectangular blocks
- 6 slices bacon, but into thirds
- ½ cup pomegranate molasses
Preheat oven to 400°. Make a slit in the side of each date and carefully remove pits. Insert a block of Manchego into each date. Squeeze the dates closed to secure. Wrap each date with a bacon strip and secure with a toothpick. Place the dates on a parchment-lined baking sheet and bake until the bacon is starting to crisp. Turn dates over to crisp the bottoms. Remove from oven and brush all sides of the dates with the pomegranate molasses. Return dates to oven until crackly and sticky, about 2 minutes. Serve hot.
