Namazake is the term given to sake that has not gone through the pasteurization process. Not pasteurizing leaves the sake with a youthful, fresh, zippy, and lively flavor profile. However, not pasteurizing also makes the sake less stable and has a shorter shelf life making it harder to ship, so getting your hands on a nama is very rare.
Each year, we get a very small allocation of namazake from our brewer partners, and we are excited to share this year’s inventory with you. Your nama will be express shipped to you and should be refrigerated upon arrival. Bottles have a shelf life of approximately 6 months.
